Pan fried Turkey Breast Salad with Fresh Fruits and Veggies

The hubby came home from the Yankee game today and was famished. The Braves won, so he needed a little pick me up. I was in the studio taking photos for my summer jam, so as not to waste the fruits I used in the photo shoot I put them in his salad.

I think this would be a perfect summer salad, if anyone is look for a change.

Ingredients:

• For the Salad:

• 2 cups Romaine lettuce, chopped

• 1 pan-fried turkey breast, sliced

• 1/2 cup blueberries

• 1/2 cup blackberries

• 1 peach, sliced

• 1/2 cucumber, sliced

• 1/2 cup cherry tomatoes, halved

• 1/4 cup shredded carrots

• 1/4 cup thinly sliced onions

• 1/2 red bell pepper, thinly sliced

• For the Dressing:

• 3 tablespoons olive oil

• 1 tablespoon lemon juice

• 1 teaspoon honey

• 1 teaspoon Dijon mustard

• 1/2 teaspoon dried oregano

• Salt and pepper to taste

Instructions:

1. Prepare the Turkey Breast:

• Season the turkey breast with salt, pepper, and your favorite herbs or spices.

• Heat a skillet over medium heat and add a small amount of olive oil.

• Pan-fry the turkey breast for about 6-8 minutes on each side, or until fully cooked through.

• Remove from the skillet and let it rest for a few minutes before slicing it into strips.

2. Assemble the Salad:

• In a large salad bowl, add the chopped Romaine lettuce as the base.

• Arrange the blueberries, blackberries, peach slices, cucumber slices, cherry tomatoes, shredded carrots, sliced onions, and red bell pepper on top of the lettuce.

• Place the sliced turkey breast on top of the salad.

3. Prepare the Dressing:

• In a small bowl, whisk together the olive oil, lemon juice, honey, Dijon mustard, dried oregano, salt, and pepper until well combined.

4. Serve:

• Drizzle the dressing over the salad just before serving.

• Toss the salad gently to mix the ingredients and ensure they are coated with the dressing.

Tips:

• You can substitute the turkey breast with grilled chicken or any other preferred protein.

• Feel free to add other fresh fruits or vegetables according to your taste.
